Behind the Ice: Bar Trigona’s Glacier and Lunara

When Bar Trigona, recently ranked No. 38 in the 2026 Asia’s 50 Best Bars, asked us to help bring their latest cocktail menu, Nectar of Time, to life, we knew we were in for a challenge. The fun kind.

Back then, PURO was barely three months old. We were still finding our feet, figuring things out as we went. No pressure.

Rohan, Bar Trigona’s Head Bartender at the time, already had the vision. He would tell us what he wanted, we’d disappear into the freezer, return with samples, tweak them, then do it all over again. Convo probably went down like this.

“Hey can you guys make butterfly pea flower ice?”
“Errr… You mean like clear blue ice? 👀”
“Oh it doesn’t need to be clear ice”
“Phew. Suuuuuure.” Well… sort of.

Turns out there’s a fine line between “beautifully infused” and “did someone spill blue food colouring in my drink?”

Too much butterfly pea and the ice looked overpowering. Too little and you’d barely notice it. We spent plenty of time testing different infusion levels until we landed on that sweet spot, where the colour slowly blooms as the ice melts without taking over the drink.

The result became Glacier, a herbaceous cocktail served with handcrafted butterfly pea mini ice balls that gradually unfurls rich blue violet hues, almost like watching a glacier slowly melt in your glass.

Then there was Lunara.

This one called for a perfectly clear ice orb with a single raspberry suspended right in the middle. Sounds easy until you remember we’re dealing with fruit, water and freezing temperatures that all behave differently.

After a few rounds of testing (and sacrificing a respectable number of raspberries), we got there.

As the orb slowly melts, the raspberry is revealed at its heart, pairing beautifully with raspberry, lychee and fragrant rose geranium leaves.

Nectar of Time is inspired by the passing of time, exploring how flavours, spirits and memories evolve with every sip.

Which makes our role pretty cool, literally.

For once, we weren’t just making ice to chill a cocktail. We were helping create a cocktail that changes over time. As the ice slowly melts, colours bloom, flavours soften and the drink transforms into something slightly different from where it began. Time became one of the ingredients.
